Soba Noodles with Saucy Chilli Sambal

This is such a great healthy option for a weekday dinner!  You can swap the greens for pretty much most other vegetables but fried mushrooms, pak choi and cauliflower are nice subs.  The sambal has a mild heat and comes with sesame and brown miso undertones.  You could forget the dressing and just slather it all over…I won’t tell anyone! 

Ingredients:

SERVES 1

GF/VEGAN

100g cooked soba noodles, hot/cold

Handful coriander leaves

100g spinach

100g cooked edamame beans

100g silken tofu, sliced

1 tsp white sesame seeds

1 tsp black sesame seeds

Handful roasted cashews, roughly chopped

For the dressing:

1 tbsp Chilli Sambal

1 tbsp rice wine/apple cider vinegar

2 tbsp toasted sesame oil

Squeeze of lime juice, optional

In a small bowl, mix together all of the ingredients for the dressing and taste to check seasoning.

Prep a serving bowl and add the veg, noodles, cashews and sesame seeds.  Drizzle over the dressing.
