Roast Kale, Rainbow Carrots, Noodles & Peanut Sauce

This is my favourite type of healthy food. Using up what is in season and pairing it with a good sauce. I found some amazing noodles made with squash and ginger for this by @KingSobaNoodleCulture . You can of course use whatever you fancy. Some kimchi would also be great here!

Ingredients:

1 medium carrot, peeled into thin strips
x2 large handfuls of kale, (roasted at 170 C degrees for 4 mins with 1 tbsp oil + pinch of salt)
Half an avocado, sliced
handful radicchio, sliced
1 tbsp black sesame seeds
100ml soba noodles, cooked to packet's instructions
1 tsp peanut salsa, optional

For the peanut sauce:

1.5 tbsp smooth peanut butter
1.5 tbsp soya sauce
1.5 tbsp white wine vinegar
1.5 tbsp grated ginger
1/3 garlic clove, grated
zest and juice of 1.5 limes
pinch sugar, optional

Add everything for the peanut sauce into a bowl and use a whisk to combine. Plate up with the rest of the noodles and veg. Pour sauce over and sprinkle over the sesame seeds with a last squeeze of lime juice.
