Miso Cauliflower Steak One Tray

I made this for my family in the Cotswolds when we had a cauliflower and broccoli to use up. This was buttery and there was no butter. The miso and olive oil create a delicious rich sauce and you just throw it all in and let the oven do the work. Serve with rice and avocado for a very easy low key dinner. If you have lots of leaves, slice them lengthways, roast on a separate tray and make half the sauce quantity again. Please note the leaves will only take 25-30mins.

Vegan

Serves 2-3

Ingredients:

1 whole cauliflower, sliced lengthways into 2cm pieces

For the marinade:

15g ginger, grated

1 tbsp maple syrup

2.5 tbsp white miso

9 tbsp water

3 garlic cloves, grated

4 tbsp olive oil / sesame oil

Salt and pepper

Preheat the oven to three 200C degrees.

Divine the cauliflower steaks between two small baking trays laying them flat.

Whisk the marinade together until combined.

Divide between the trays and pour over cauli. Season with salt and pepper. Cover with tin foil and roast for 30mins. Remove foil and roast for another 15mins or until golden.
