Raw Rainbow Wraps with Peanut Sauce

This was one from my newsletter this month. They are so tasty and pretty good for you with the raw veg and colour variety. It’ll cut through all the Easter choc nicely.

Ingredients:


Vegan/GF
Serves 2 as a starter/lunch

1 radicchio, leaves carefully separated
1/4 red cabbage, thinly sliced with mandoline
1 medium carrot, cut into thin sticks
1 chicory, thinly sliced into strips
1 avocado, sliced
3 radishes, sliced
1/2 red chilli, optional (sliced)
2 tbsp sesame seeds
2 tbsp sesame oil, optional

Peanut Sauce
2 tbsp smooth peanut butter
zest and juice 1 lime plus extra for serving
1 tbsp grated ginger
2 tbsp white wine vinegar
2 tbsp soya sauce
1 tsp maple syrup
1/5 clove garlic, grated
black pepper


In a bowl, add all the ingredients for the sauce and whisk together until smooth. Check the seasoning!


Assemble a little of each veg into the radicchio leaves, top with a spoon of sauce, a little chilli and sesame seeds. Add a drop of sesame oil and lime juice into each lettuce cup.

Add the leftover sauce into a bowl for dipping.
