Carrot Crêpes

I mixed these with a few bits I bought at the weekend (radicchio, spinach, avocado, parsley and pesto). I found this amazing macadamia nut cheese which was pricey but quite a fun addition. These are delicate and need lots of olive oil and a non-stick pan. They are crispy and delicious though.

Ingredients:

Vegan/ spelt
Makes 4 pancakes

80g spelt or plain flour
180ml oat milk
60g grated carrots
Pinch salt
Olive oil for frying

Add the ingredients for the crêpes into a blender and mix for 30seconds or until smooth. Set a large frying pan to a medium heat. When hot add 2 spoons of oil and then pour in the batter, about 3-4 tablespoons.

Swirl batter around pan to create thin layer. Leave without touching for 2.5-3mins. Then carefully use a spatula to flip the pancake over. Fry on the other side for another 2mins.

Repeat with the rest of the batter with the same amount of oil. Top with avocado, greens, cheese and pesto or chilli oil. Eat like a taco!
