Hot Chipotle Corn
Butter and Salt has always been my favourite with corn but, this of course takes it up a notch and off to Mexico. Can’t beat it! I love the Gran Luchito chipotle for sum hot smoke! Good for this London Heatwave.

Ingredients:
- x 2 corn on the cob (boiled for 14 mins) 
- 90g unsalted butter, soft 
- 1/2 tsp sea salt 
- 1/4 tsp chipotle paste 
- 1 medium chilli, thinly sliced 
- 1/3 garlic cloves, grated 
- Zest and juice 1 lime 
- Few coriander leaves 
Beat butter, salt, garlic, chipotle paste, chopped chilli together until smooth. Spread on hot corn. Add zest, juice and coriander leaves. That’s it!
