Lobb'y’s Chilli Omelette

Lobby's omelette recipe is probably my favourite style because it is thin and has a great kick.

Lobby 🦞 is one of my best mates who used to make it for me when we lived together. She recommends eating it after doing sport or when you might be hungover. I can agree with her on both accounts, but it's also nice for a quick dinner/breakfast!

Use any chilli oil you have or Tabasco is also incredible here. I used high-end eggs via Clarence Court. Look at that colour!

Ingredients:

Serves 1
2 medium eggs, lightly beaten
1 tsp butter
1 tsp olive oil
1 spring onion, thinly sliced
1/2 chilli, thinly sliced
small handful coriander, chopped
half an avocado
a squeeze of lime juice
pinch of sea salt
chilli oil for serving

Set a large saucepan to medium to high heat and add the butter and oil to melt. Add the beaten eggs and swirl everything around the pan.

The omelette will cook very quickly so take off the heat and sprinkle over spring onions, chilli and coriander.

Slip onto a plate and add avocado, more coriander, salt, squeeze of lime and chilli oil. Eat straight away!
