Baked Cheesecake

Olia suggests serving with jam so I added in some blood orange segments and made a quick syrup with the juice of 2 oranges and a spoon or two of brown sugar. Boiled it down to thicken and poured over. Thank you @oliahercules for the recipe! Delicious! Nice one for #mothersday too.

Ingredients:

Serves 8-10
100g butter, melted and cooled, plus extra for greasing
500g cottage cheese
3 eggs
100g granulated sugar
100g semolina
1 tsp. vanilla extract

Preheat the oven to 160°C/Gas Mark 3, and brush a 1kg (2lb) loaf tin / 9inch square tin with melted butter to grease. Mix all the ingredients together in a bowl and let the mixture stand for 15 minutes to allow the semolina to absorb a bit of the moisture.

Pour the cake batter into the greased tin and bake for 1 hour or until the cake is firm and forms a golden crust on top. Let it cool in the tin for 15 minutes, then turn out. Serve it warm or at room temperature as it is and eat on the day.
