Mushroom Mascarpone Mac & Cheese

I made this because I was craving Mac and Cheese and I’m a mushroom lover! It’s another simple one tray dinner that is made for cold weather. Magic happens with thyme, mushrooms, garlic and butter.

Serves 2

Ingredients:

220g mushrooms, (I used a mix of chestnut and white), cut roughly into quarters

20g butter, cut into cubes few thyme leaves

2 tbsp extra virgin olive oil

6 garlic cloves, thinly sliced

250g mascarpone cheese

100ml veg stock, hot

Few gratings of nutmeg

Lots of fresh black pepper

250g macaroni pasta, cooked but still al dente

3 tbsp panko breadcrumbs

25g grated parmesan

Good pinch of salt

Set the oven to 220C grill setting. Add mushrooms, butter, thyme leaves, salt and pepper to a small baking tray (roughly 21cm by 27cm). Place under grill for 10mins!

For the cream sauce, set a large frying pan to a medium high to heat and add 2 spoons olive oil. Add the garlic and gently fry for 1min. Now pour in the stock, mascarpone and nutmeg. Mix together and season with salt and pepper. Taste to check seasoning.

Pour in al dente macaroni, bring to a simmer just to combine. Taste to check the seasoning adding more salt and pepper to taste.

Then carefully pour pasta into the mushroom baking tray. Top with breadcrumbs and grated cheese. Place under the grill for 9-10mins.

Eat straight away!
