Roasted Rhubarb Cake

INGREDIENTS:

For the sponge:

250g unsalted butter, soft, cut into cubes


200g caster sugar


5 medium eggs, lightly beaten


190g spelt flour


60g walnuts, finely chopped


1/2 tsp baking powder


1/2 tsp bicarbonate of soda


1/2 tsp salt


50ml whole milk


1 tsp vanilla extract
 


For the rhubarb:

350g rhubarb, sliced into 3cm pieces

Zest + juice 1 orange

Zest + juice 1 lemon

50g brown sugar, plus 1 tbsp extra for the syrup
 


For the whipped cream:

200ml whipping cream


1 tbsp icing sugar, plus extra for dusting


1 tsp vanilla extract

Add rhubarb into a baking tray along with the citrus juices, zest, sugar and mix together. Place into a preheated 180C degrees oven for about 13mins or until soft. Fish out pieces and scrape juices into a small saucepan. Add the spoon of brown sugar and simmer for 5 mins until thickened. Leave to cool.

For the sponge grease and line x2 19cm cake tins. Put the butter and sugar into a cake mixer and beat for 10 mins until very light and fluffy. In a bowl, mix flour, bicarb, baking powder and salt. Continue beating the butter and slowly add a little of the eggs followed by a few spoons of the dry mix. Continue adding a bit of each until all is incorporated. Stop the mixer and scrape down sides and stir in walnuts, milk and vanilla until just combined. Divide batter equally between the 2 tins and bake for 35mins or until a skewer inserted comes out clean. Leave to cool completely.


In a bowl, add the ingredients together for the whipped cream and beat until light and fluffy.

To assemble, spoon syrup on top of one cake, top with whipped cream, then half the rhubarb and place other cake on top. Dust generously with icing sugar and top with rest of rhubarb.
