Simple Greek Salad Recipe

Greek Salad

The salty vs sweet and creamy! Got to be one of the best summer recipes, especially with the tomatoes being on point.


Serves 2
Ingredients:
400g tomatoes, all sliced unevenly
2 tbsp capers
handful of flat-leaf parsley or basil
1 cucumber, peeled and roughly chopped into cubes
1/3 red onion, thinly sliced
1 tbsp dried oregano
x2 handfuls olives
200g feta cheese
1 romano pepper, optional (thinly sliced)

Dressing:
7 tbsp extra virgin olive oil
3 tbsp white wine vinegar
a squeeze of lemon juice
salt and pepper

Add the onion into a sieve and run under cold water for at least 30 secs to 1min. This will mellow the taste a bit. Drain.

Mix all the dressing ingredients together and taste to check the seasoning. Remember the feta, capers and olives will be salty, so go easy on the seasoning.

Add tomatoes and cucumber (pepper if using) into a bowl and toss together with some of the dressing and a little oregano. Divide between two plates, and add the rest of the ingredients including the onions. Divide the feta between the two. Drizzle over with leftover dressing.
