Fried Chicken Asparagus Tacos

A lil' recipe to enjoy right now for dinner al fresco!

Enough for 2-3 people | Prep Time: 10 mins | Cook Time: 5 mins | Total Time: 15 mins

INGREDIENTS

3 chicken boneless thighs
1 tbsp plain flour
2 tbsp groundnut or sunflower oil
1/2 tsp garlic powder
Salt and pepper

Toppings:
Tacos of choice
100g blanched asparagus, chopped
Handful coriander, or finely sliced jalapeño
2 limes
2 tbsp toasted sesame seeds

Guacamole:
2-3 tbsp soured cream
A few spoons of Chilli Oil

METHOD:

1. Place chicken on a sheet of cling film or baking paper and top with another piece. Use a rolling pin to flatten the chicken so that it is even, about 2cm thick. Season well with salt and pepper. Dust lightly in flour.

2. Set a large frying pan to a high heat and when hot add the oil. Place chicken carefully into the pan and fry for about 2.5 minutes or until golden. Turn over, flattening the thighs down with a frying spatula, and fry for another 2 minutes or so.

3. Take off heat and place on a plate, squeeze over lime juice and rest for 5 minutes. Then slice up and mix in a bowl with asparagus, more lime juice, a spoon of Chilli Oil and a pinch of salt. 4. Add the mix to tacos and top with toppings and more Chilli Oil.
